The quality of Jamón Ibérico starts with the breed of the pig. Only hams that come from at least 50% Ibérico breed pigs can be labeled as "Ibérico." However, the highest-quality hams come from 100% purebred Ibérico pigs. These pigs have a unique ability to store fat within their muscles, giving the ham its signature marbling and rich texture.
